THE PERFECT EGGS BENEDICT

Making an Eggs Benedict is such a simple breakfast idea that is actually easier than you think.

The must-have components are crispy bacon, warm buttered toasted English muffins, poached eggs & a creamy Hollandaise sauce.



Tip: You can replace the bacon with slices of smoked salmon, add avocado & I love to add arugula mixed with balsamic glaze on top!

INGREDIENTS

  • 8 pieces of bacon

  • 2 eggs

  • 2 teaspoons of rice vinegar

  • 2 English muffins

  • Butter

  • lemon juice

  • basil pesto

  • salt & pepper

  • cayenne/chilli flakes

  • smoked ham

  • arugula

  • balsamic glaze/dressing

HOLLANDAISE SAUCE

  • 10 tablespoons unsalted butter

  • 3 egg yolks

  • 1 tablespoon lemon juice

  • salt to taste

  • dash of cayenne

  • lemon juice

METHOD FOR THE HOLLANDAISE SAUCE

  • melt 10 Tbsp unsalted butter

  • add the 3 egg yolks, a tablespoon of lemon juice, 1/2 teaspoon of salt into a blender. Blend this on medium to medium high speed for a period of 20-30 seconds until the eggs lighten in colour.

  • turn the blender down to its lowest setting, slowly dribble in the hot melted butter while the mixture is still blending.

  • taste for salt and lemon juice to taste

ASSEMBLING YOUR EGGS BENEDICT

  1. Open your English Muffins and lightly butter either side

  2. Add a slice of smoked ham on either side

  3. Place your poached eggs on top

  4. Drizzle your hollandaise sauce over

  5. Add arugula

  6. ( instead of bacon strips I added bacon bits )

  7. Finally, add a drop of basil pesto & chilli flakes
