THE PERFECT EGGS BENEDICT

Making an Eggs Benedict is such a simple breakfast idea that is actually easier than you think.
The must-have components are crispy bacon, warm buttered toasted English muffins, poached eggs & a creamy Hollandaise sauce.

Tip: You can replace the bacon with slices of smoked salmon, add avocado & I love to add arugula mixed with balsamic glaze on top!

INGREDIENTS
8 pieces of bacon
2 eggs
2 teaspoons of rice vinegar
2 English muffins
Butter
lemon juice
basil pesto
salt & pepper
cayenne/chilli flakes
smoked ham
arugula
balsamic glaze/dressing
HOLLANDAISE SAUCE
10 tablespoons unsalted butter
3 egg yolks
1 tablespoon lemon juice
salt to taste
dash of cayenne
lemon juice
METHOD FOR THE HOLLANDAISE SAUCE
melt 10 Tbsp unsalted butter
add the 3 egg yolks, a tablespoon of lemon juice, 1/2 teaspoon of salt into a blender. Blend this on medium to medium high speed for a period of 20-30 seconds until the eggs lighten in colour.
turn the blender down to its lowest setting, slowly dribble in the hot melted butter while the mixture is still blending.
taste for salt and lemon juice to taste
ASSEMBLING YOUR EGGS BENEDICT
Open your English Muffins and lightly butter either side
Add a slice of smoked ham on either side
Place your poached eggs on top
Drizzle your hollandaise sauce over
Add arugula
( instead of bacon strips I added bacon bits )
Finally, add a drop of basil pesto & chilli flakes
