Open-Faced Chicken Salad Sandwich

Let's be honest - lunch can be a little boring. We usually find ourselves whipping up a quick salad, last night's leftovers or a quick sandwich that was thrown together before rushing out the door. Especially during quarantine, it's time to step up your lunch game. Not just a normal sandwich, but an open-faced sandwich will make your workday a thousand times better.

The Open-faced Chicken Salad Sandwich

Chicken salad is honestly a no brainer when it comes to open-faced sandwiches. I would usually make myself a normal chicken salad & I try not to make myself a sandwich for lunch, however, I tend to get a string sandwich craving. When this happens, I try & split the difference between a sandwich & no-sandwich by making it open-faced, which means one piece of toast. So it can't be that bad right?


Ingredients

  • shredded chicken

  • 1 slice of bread

  • carrots

  • cucumber

  • lettuce

  • mayonaise

  • greek yogurt

  • peppadews

  • roasted walnuts

  • parmesan cheese

  • balsamic glaze dressing

  • hot sauce (optional)

Instructions

  1. Using a small mixing bowl, combine mayonnaise and Greek yogurt. Stir to combine the dressing. Add shredded chicken to the bowl & fold it into the dressing.

  2. Pile the mixture of chicken onto a slice of toast

  3. Add the salad ingredients on top - cucumber, lettuce, grated carrots & sliced peppadews

  4. Add roasted walnuts to add more texture

  5. Finish it off with a sprinkle of grated parmesan cheese, balsamic glaze dressing & I love to add a hot creamy sauce on top to enhance the spice.

This really simple recipe is quick & easy. All the ingredients can be substituted for basically anything else you would prefer in your salad!
